Buy rotisserie chicken in the grocery store with precut veggies and fruit. Add baked potato or baked sweet potato.
Or how about cooking chili or meat loaf -- make enough that will last two meals.1 -
- Anything in the Crockpot (just throw ingredients in and let them cook overnight.. You can absolutely put raw chicken or dry beans w out soaking in the crockpot)
- Frozen veggies on hand- microwave and add butter or earth balance salt and pepper
- Boiled potatoes (save some for adding to a vegetable stirfry or an omelette or soup)
- Frozen chicken or "soy chicken Pattys", or veggie burgers, serve w veggies or potatoes or a salad
- Baked veggies; potatoes, mushrooms, zucchinis, onions
- Pasta
