Blood sugar dropping

I'm on week two of eating better, less carbs/sugar and more protein/veggies.
But I am finding that between meals I get shaky and weak. It goes from 0-60 in minutes.
Any ideas on how to combat this? Is there something I'm doing wrong? Not getting enough of?
Typically my day goes-
Breakfast-
Eggs and bacon, piece of toast.
Lunch-
Tuna with one piece of bread and salad
Dinner-
Roast with potatoes and carrots

    Have you measured blood sugar and blood pressure?
