I tried it for the first time for dinner tonight. Delicious! Love the slight crispy. Simply coat cubed tofu with cornstarch and fry oil. I added a little low sodium soy sauce and it was delicious!

I'm also not one for " frying " I sautéed it lightly so it worked great. I didn't have any high smoke point oil so I used olive oil. But you can also bake it. Just search crispy tofu on the Internet and you should come up with a number of recipes. I went for the easy recipe. Simply coat the tofu squares with cornstarch and either fry lightly or bake. Be sure to press the tofu with a cloth kitchen towel to get to get all of water out of the tofu. I used extra firm tofu. No chance of falling apart. Actually it wasn't low-sodium soy sauce I used organic low-sodium tamari. Delicious!

A quick way to prepare crispy tofu (via the Isa Does It cookbook) is to NOT press out all the water, but do drain it and just quickly pat dry. Chunk the tofu and run it through soy sauce, then toss w/ panko or breadcrumbs & fry.

Tofu is also so delicious when I make it for Parmigiana - I cut it into thin planks and run it through an egg wash, then seasoned panko (with lemon zest) and pan fry. It does take some oil, or otherwise it just isn't going to get the desired golden crunch to the coating. But I think it's worth it!

Just out of curiosity, how do you eat it if you don't crisp it? I think I'd find that unappealing.

I make it into a tofu scramble with favorite chopped vegetables adding shredded cheddar or Colby-jack cheese. I sometimes add onion powder. Dillweed. Or some chili powder. It's great with salsa as well over the tofu scramble.

Thank you. Haven't seen it at my grocery store. But a local health food store is looking into if they can order it. Looking forward to the possibility of trying it. Organic also. Perfect!
