Grinding wheat, making dough

Hey! I'm all obsessed with grinding wheat berries into flour and keeping a semi-sourdough dough going all the time in my fridge. It's so easy! As a household of one, I don't need that much flour, so rather than shell out $$$ for a large electric grain mill, I bought a Cuisinart coffee grinder that does the job very well for about 50 bucks.

I say semi-sourdough because when I feel like my dough needs more oomph! I sprinkle a little yeast into the mixture. The recipe is: home-ground flour, orange juice, water, sea salt, and oil, and more yeast as needed. I'm using the dough for pizzas (the pizzas are super thin-crust, with delicious home-made sauce, which I also keep on-hand ,and a sprinkling of mozz and Asiago- mot too much. I also usually top 'em with caramelized onions.

But when I started using home-ground wheat berries instead of bought "whole wheat" flour, the crust was so good, I need to try it plain. That was just pain amazing. I put a generous amount of corn meal on my non-stick pan to give a nice crunch, and spread out the dough (which is NOT stiff at all) with my fingertips. I've been taking one of these plain wheat disks to work with me for the past week, and they are so satisfying I don't think of eating again for several hours. I feel less bloated since I've been eating these, too. It's not scientific, just my own observations, but I think that home-ground wheat berries must be super-healthy. And the disks are so yummy!
