What if I continually exercised and ate at maintenance for a week but on one day of the week I ate over maintenance . Would I slowly gain weight even if I continually exercised during the week ?

If your overall calorie consumption for the week equaled your calorie expenditure, you would maintain.
You would need to exercise enough to balance out the excess calories you ate. If you consumed more than that, you'd slowly gain. If you consumed fewer calories than your body used, you'd slowly lose weight.4 -
If you didn't eat your exercise calories then you would be fine depending on how far you eat above maintenance on that day, but if you do eat your exercise calories then you would slowly gain weight over time even with that one day over maintenance.2

Its about the overall weekly calories not just one day of going under.
Personally I eat at slight deficit (200 cals/day) during the week to allow me to go way over on the weekends - it works perfectly (been maintaining for 3+ years)4
