Lunch - Y U SO BORING!?

Is it just me that finds lunch to be inherently boring? It's done at a desk more often than not, it's leftovers, or salad, it's just dull. Anyone got any interesting lunch ideas in the 400/500 calorie range? I tend to try and eat clean, so as little processed ingredients as possible please?

    I struggle with variety for lunch some ideas are

    Making a large batch of soup and freezing individual serves with a side of hard boiled eggs
    My favourite at the moment is a BLT sandwich which comes in just over 500cal including avocado and cheese
    Left over dinner in smaller serves

    My lunch meal is pretty much strictly fuel...a lot of times it's leftovers which are usually pretty good, but sometimes it's just a sandwich or something. Dinner is where I typically get creative. I really don't care about lunch other than the fact that I need to eat...I'm generally at my desk working and I just need fuel.

    This. And when I'm creative at dinner, it means better leftovers for lunch (although usually a little smaller portion plus an apple and a vegetable).

    I had to make my salads more interesting to enjoy them. I tend to cook with olive oil, so for salads I'll use a different oil like walnut oil as a salad dressing base, or I'll use EVOO but add a fun flavored balsamic vinegar like fig. I add things like steamed yellow beets, apple, pomegranate seeds, and crumbled feta or blue cheese for a big flavor boost. Different kinds of berries can be good, depending on what else is in there. If I want carbs in my salad I experiment with adding black rice or quinoa to the mix. This may not be what you're looking for, but I can eat kale salad for weeks on end in this way.

    You're eating at your desk, I've been eating on my way to my noon workout. I figure: eat how the Mexicans did: PORTABLE (i.e. burritos). So I put fun stuff in lower carb or whole grain tortillas. Sometimes I make a big crockpot of something (chicken and green chile, pulled pork and red chile roast beef and green chile...) and use that, sometimes I just use basic stuff like ham and cheese and pesto.

    Sometimes I go totally vegetarian: cucumber, sprouts and hummus in my little wrap.
    You name the left over (curried lentils) I can shove it in a tortilla.

    I like to have filled pitta breads for lunch. Now I'm vegan, I usually fill a wholemeal pitta with hummus, falafels and salad. Before I would have ham with sliced boiled egg, salad and mustard mayo. :)

    I keep canned chicken (I like Tyson Premium White Chicken) on hand. It's 300 calories a can. I like to add a can of Rotel (or any canned diced tomatoes) to it also. That is maybe 45 calories a can. I also bring cut up fruit and veggies from home; watermelon, mango, apples, strawberries, bell peppers, cucumbers. I do like to bring leftovers as well. My job is boring and I eat at my desk a lot so I try to make lunch interesting.

    This week I've been having noodles, steamed veggies and chicken.

    Most of the time I have brown rice, steamed veggies and chicken.

    Sometimes I mix it up with a LaZuppa soup (various flavours, whatever I'm in the mood for), noodles and steamed veggies.

    Maybe about once a week I have a MugShot (various flavours, whatever I'm in the mood for) with steamed veggies and chicken.

    Now and then I'll do a sandwich ... whole grain bread, chicken, cucumber.

    Sometimes I swing by the fresh fruit and veg market and pick up snowpeas or something ... I love snowpeas and I'll add them to the usual steamed veggies.

    I mostly do leftovers. Also I put more calories in lunch than other meals, if I can. It's the mid-day and my energy over the day seems best if I do small breakfast, big lunch, small supper.

    Today it's tostadas. Tostada shells, black beans refried, shredded cabbage, cheese, fresh jalapeno slices, avocado, tomato, chipotles en adobo. Not boring ;)

    I have dinner leftovers a lot for lunches. My dinners are not boring so my lunches are not boring.
    I have sandwiches or wraps or salads. You can make a lot of variations on those.
    There are tasty flavored tuna pouches that are great on sandwiches or salads.
