Chickpea fritters.
Make pancake batter (unsweetened) and add some curry powder and crushed garlic. Mix in cooked chickpeas (canned is fine), enough so that they are just coated with batter, and fry dollops of the mix on medium heat until cooked through. You can mix all sorts of veg in, like diced onions, diced peppers, peas, sweetcorn and so on.
Very substantial comfort food - my mum used to make them when we were teenagers and my brother was a vegetarian. Don't eat too many all at once as they are moreish but very filling, and the fullness doesn't catch up with you right away!
Eta not clear if you are vegetarian or vegan - if vegan, I'm sure you can find a suitable pancake batter recipe online- I'm afraid I don't have any vegan pancake experience.0 -
