Hi
Being a somewhat lazy person that hates cooking I have found that the Lean Cuisine Meals run a decent calorie count. The entire meal comes in under You target calorie count even though I eat 1/3 to 1/2 head of Lettuce with Lunch and Dinner. Likewise I use 1/2 bag of frozen vegetables 6 ounces at each meal and either an Apple or Orange for fruit. I eat a small to medium banana every morning before I go walking, Then on my return a 110 to 120 calorie Protein Shake and a Bowl of cereal, Sweetener with 1% milk. The cereal brand and portion is chosen to be around 110 calories per serving, the 1% Dollar store no refrigeration needed until opened milk is 50 calories for the 4 ounces used.
For a treat or special Occasion I may switch the Breakfast cereal for a Dunkin Donut, one of the 260 to 270 calorie ones, the small to medium Banana and Protein Shake and still be under 500 calories.
I should mention that the only Coffee I drink is the 32 ounce Black no Sugar while I walk each morning. Using this regimen I have been maintaining for several months now.
Good Luck

Swap the thigh for breast and you will probably get to the 500 mark. 6 months ago they calculated it as 350 call!0 -
Sweet Potato Curry on cauliflower rice.
Cauliflower rice is 30 calories for one cup. just grate up a whole head of cauliflower and you have roughly 3 cups.
Sweet Potato Curry has the following:
roughly 400g of sweet potato
roughly 300g white onion
moderate amounts of whatever vegetables you like.
last night we had a few hundred grams of red bell pepper and a few hundred grams of brussel sprouts
1 cup frozen peas (but we did not include this last night)
1 tbsp chili powder
1.5 tbsp cumin
1 beef boullion cube
1 teaspoon red pepper flakes
3 tbsp tomato paste
as long as you are accurate with weighing and creating the recipe within MFP, you should be fine. Last night we made this and got 3 servings from it. with 1/4 piece of naan bread, the total came to 393. i was full forever after i ate it too

I'm a big fan of Budget Bytes. Many of her recipes end up around 500 calories or so, especially if you reduce or eliminate rice/pasta etc.

Virtually everything in the diabetic dinners section of the Taste of Home website. Almost nothing tastes like a "diet recipe" and there are a ton that can be made in 30 minutes or less, which is always my ideal. Here's a very small selection of my favorites:

I just had Mexican Enchilada Casserole for lunch - 355 calories (to 430 calories depending on if you add black beans or not)
I posted the recipe a while back on MFP. Here is the link
