Favorite hot weather dinners?

What's your favorite hot weather dinner? I'm especially looking for things that don't require much planning ahead.

We call hard boiled eggs, bread, cheese, strawberries/stone fruit and salad Summer Dinner at our house.

Tonight was yogurt and blueberries for the kids (not ideal but could be worse) and mozzarella pesto tomato sandwiches for the grownups.

    We do a lot of sandwiches in the summer. I also love slow cooking batches of chicken or pork (whatever is on sale), pulling/chopping it and then everyone can pull out what they want for the next few days. Great for salads, quesadillas, rice bowls, and sandwiches.

    lettuce wraps we love... chicken, sweet chili sauce, shredded carrot, zucchini, cilantro, green onion, and crispy rice noodles.

    Giant fresh tomato salad with avocado and some protein thrown on the grill!
