For meat, bake, broil, grill, or steam, (chicken, pork chops, steak, low fat hamburger meat)
Eat veggies and fruit. Eat carbs and beans.
Stay away from added fats like butter.
Skip dairy products or buy low fat.

I eat about 10-15% fat on average (trying to avoid gallbladder removal). My first introduction to low fat eating and cooking was at the Pritikin Center, and although the center itself is now way out of reach financially, they do have a website with resources, recipes, and articles.

A lot of the low fat vegan sites are great sources for recipes. Some can be modified to include low fat dairy or lean meats if you want, but many stand on their own even for omnivores. Even if you don't subscribe to their philosophy, there are good low fat recipes to be found at sites like Forks over Knives, Engine 2, and the McDougall program pages.
