I'm looking for a good, low calorie salad recipe.

I'm going to a salad luncheon next week where we are supposed to bring our favorite salad. Last year I just took a fruit tray but this year I wanted to bring a salad. I just figure there will be plenty of macaroni salads and jello salads so I was looking for something different that would still be low calorie. Any one have any good favorites?

    How about a salad salad? Lettuce, tomatoes, red onions, shredded carrots, cucumber, radishes, peas, etc. Add quartered eggs and a small amount of cooked chicken for protein.

    Roughly chop up cucumber and watermelon. Season with some lime juice and toss with feta cheese.

    Orrrrr...

    Wash young spinach, toss with halved strawberries or peaches or apricots and some slightly roasted almonds. Dress with good quality balsamic vinegar.

    My fave a Greek salad
    Cucumber, tomato ( baby or regular ) red onion , lower fat feta , olive oil drizzled on top some mint and olives .

    This is my go-to for ladies lunch or baby showers etc.

    STRAWBERRY SPINACH SALAD with SRAWBERRY VINAGRETTE
    MAKES: 10 servings

    Ingredients
    1/3 cup olive oil
    1/4 cup sugar
    3 tablespoons white or balsamic vinegar
    1/4 tsp. poppy seeds
    1 Tbsp. strawberry preserves
    1 package (9 ounces) fresh spinach, trimmed
    4 cups fresh strawberries, sliced
    1/2 small red onion, sliced
    1/4 cup chopped pecans, toasted with a little
    cinnamon

    Directions
    1. Place the first five ingredients in blender & mix

    till creamy. ( or shake well in mason jar)

    Refrigerate for 1 hour.
    2. Just before serving, combine the remaining

    ingredients in a large bowl. Shake dressing and

    drizzle over salad; toss to coat. Yield: 10 servings.


    Nutritional Facts

    1 cup equals 141 calories, 11 g fat (1 g saturated

    fat), 0 cholesterol, 23 mg sodium, 11 g

    carbohydrate, 2 g fiber, 2 g protein.

    Do you have a Costco near you? They have a DELICIOUS kale salad kit. I bring to all my events and it's the first to go!!!!!

    Lentil and tomato salad with dill, basil and olive oil. It's also one of the easier salads to eat.

    I'm partial to every single ingredient in this salad so it tastes amazing to me, not sure how it would go with your and the other guests though.
