Anyone got any good recipes for low calorie baking or desserts? I love making these types of things but am finding getting a skinny version tough.

For baking, I just made crustless mini quiches last night. I blitzed the cauliflower heads in a food processor to give more volume. With 10 eggs, I managed to make 12 regular muffin size quiches. It could use a bit more cheese. Basically, you can throw in anything you want and it will cook into a fun snack for around 100 cals.

Mix them together, season and bake in a preheated oven at 200C for 20-30 mins.
