2 70gram eggs soft boiled with 2 slices of wholemeal quinoa bread with thin spread of salt reduced butter and 1 medium royal gala apple

    If you don't mind the cholesterol then it should be perfectly healthy.

    (More direct answer - sounds perfectly fine to me. Protein, fat, carbs and fibre all present with a smattering of micro nutrients too.)

    Sure, that's pretty similar to what I had for lunch today.
    As long as you can fit it into your calorie allowance for the day, go for it.

    What is salt reduced butter? Butter comes out of the cow without salt in it! They add it in some factories in order to extend the shelf life. I'd suggest buying unsalted butter, then adding a tiny pinch of rock salt on top of the eggs. (Rock salt in its crystal form gives more flavour per mg than table salt - it's purer too. ) Salt is the enemy of the dieter because it causes your body to hold water.
    I suspect that MFP is telling you that you are over your cholesterol limit? Unless instructed by your doctor that's not a problem. (Unless you go way over every single day) Eggs are good for you -period.
    How many calories are you eating in this 'snack'? As long as you are counting it's fine, but as others have pointed out, it seems like a meal to me.
    My 'snacks' are cups of tea without milk!
