Eating for fuel, not for hunger satisfaction

I've recently been using MFP and learning more and more about it. Although I power hike often (6 miles with at least 900 foot incline over desert terrain - jogging for at least half the distance) and recently attend spin class, I can't seem to raise endurance.
It was suggested i start eating clean (fresh) foods and to look at food as fuel as opposed to eating just to eat until full. I love the idea but I'm not sure what to consume to support both healthy diet and endurance when exerting so much energy
Thoughts are welcome. Looking for folks to follow for inspiration. Thanks everyone
