15min creamy salmon pasta

I made this delicious pasta the other day just out of the stuff I had in the kitchen already when I didn't feel like what we had planned to have!

Serves 2

2 small pieces of fresh salmon
100g (dry) pasta - we used linguine
About 1/2 can low fat evaporated milk
1-2 cloves of garlic
About 3-4 cups of chopped veg (we used onion, mushrooms, carrots, zucchini and broccoli)

1. Put the pasta on to boil and the salmon in a frypan with a little olive oil over medium heat.
2. While the salmon is cooking, chop your vegies up (but don't forget to turn the salmon about half way)
3. Once the salmon is cooked, take it out of the pan and put the vegies in to stirfry
4. Mix in the evaporated milk and cook until it thickens a little bit, add the salmon back in and heat
5. Drain your pasta and serve with the salmon and vegie sauce

Should be about 500cal per serve depending on the amount of salmon :smile:

    Might try this dont have evap milk so will use fromage frais instead ,thanks .

    I've got some fresh salmon in the fridge, will prb try this tonight!

    Might be a bit higher cal with fromage frais but hopefully it's yummy enough to make it worth it :flowerforyou:
