Meal prep ideas....need some variety

I am trying to come up with some meal prep ideas that aren't the boring chicken breast and broccoli routine. I like variety so I am thinking about making three different meals and eating them twice in the week. Do any of you meal prep? If so what and how do you do it? I am looking for ideas that won't bore the taste buds off of me. I'd ideally like to have one day a week for meal prep/portion control and then reheat as I go for each meal. Breakfast is a meal I have down, but lunches and dinners would be helpful. TIA

    I make soup, stew, curry, chili, stir fry, stuffed peppers, burgers, meatballs, meatloaf, nuggets, and either flash freeze or portion and freeze.

    All different varieties, so many options.

    I don't call my method "meal prep," as I don't do it all in one day, but when I cook my meals, I make several (at least four) portions to reheat later in the week.

    Some of my meals:
    -Stir fry - combine pretty much any meat and any frozen veggies with some kind of Asian sauce. I skip rice but make it for my kids
    -Chicken, bacon, and brussels sprouts - Cook bacon. Add chicken, minced garlic, and chopped onions. Add a whole package of frozen brussels sprouts and 1/2 c red wine vinegar
    -Turkey spinach - cook ground turkey with onions and garlic. Add 3 - 4 c fresh spinach. Sometimes I add some canned tomatoes, sometimes not. Sometimes I top with parmesan cheese, sometimes not. Lol
    -BBQ chicken with apples and onions - grill chicken. Brush with 1 T bbq sauce per portion. Grill one sliced onion and one sliced apple for each portion.

    Sides/snacks:
    -Cucumber tomato salad - marinate cucumbers, tomatoes, and onions in Italian dressing.
    -Hard boiled eggs - simple, yet satisfying
    -Protein ice cream - mix protein powder with Greek yogurt. Freeze.
    -Grilled vegetables - grill assorted fresh veggies. Asparagus, zucchini, onion, peppers, carrots...

    I made three different chicken recipes this week, Caprese Chicken, Red Curry Chicken and Cashew Chicken. I was going to make Chicken Dijonaise tonight but my youngest wanted Cashew Chicken again. There are a variety of sides you can do with them and each dish has its own flavor. Last night we had steak fajitas.

    Oh and each recipe was 30 minutes or less.
