Well, the key is cutting down the fat calories, but you can't avoid the potato ones! I miss out the butter, use a splash of wholebean soy milk (similar calories to semi-skimmed but a little "thicker" in consistency) and then season it *really* well. Using a garlic salt seems to add a bit of zing, and lots of black pepper. You can think about herbs too - chives wild garlic perhaps - to add depth.1

Some people think mashed cauliflower is a good lower calorie mashed potato substitute. I've had and think it tastes pretty good and is similar enough. You could do half cauliflower and half potato to cut calories a bit but still have potato. https://recipes.sparkpeople.com/recipe-detail.asp?recipe=610934
Use lower fat milk. Try using broth instead of milk. http://www.food.com/recipe/skinny-mashed-potatoes-145147
Cut down on butter.
Add flavor with garlic or herbs.1 -
Fat free sour cream, salt, pepper, garlic powder and slot of finely chopped green onions!0
