Can you oven fry breaded fish or chicken by just adding a spray of olive oil from a can onto a cookie sheet, or is more oil necessary?

Oven fry? Isn't it either bake in the oven or fry on the hob?

I like to coat my chicken in hot sauce and then bread them with panko bread crumbs. I use the spray to help them not stick to the pan and to give them a bit of a crispy coat on top.

No more is necessary. You have a good plan.

I like to do chicken just as is in the oven. If the skin is on it will be oil enough to get crispy on it's own. I do a little salt and pepper then let'r bake.

It's easier if you use lighter bread crumbs, like panko or crushed cornflakes - it doesn't take much to keep them on. I find it takes more fat to make regular bread crumbs stick, but I'm not much of a cook

That sounds like a very clever idea! I usually just bake or broil, but I'm curious to hear how good it tastes doing it this way.

This. With panko or crushed cornflakes (or crushed potato chips >:) ) they bake just fine with no added oil. Sometimes I just press a bit of breading on the top of the breasts and leave the undersides plain so that I get the taste and a bit of crunch without as many carbs.
