Hello! I need help coming up with recipes for keeping my veggie intake high. I've been eating big salads (lite on dressing), snacking on raw carrots, celery, etc everyday and don't want my taste buds to get bored. Please share your healthy veggie recipes. Thanks!

I just take fresh vegetables, wash and cut them up, toss them on a foil lined cookie sheet and put salt, pepper, and garlic powder. I used to put some olive oil, but I haven't lately. And cook them at 400F for about twenty minutes.
I'm doing cauliflower and zucchini tonight, but I use whatever I have. Broccoli, squash, Brussels sprouts, asparagus, carrots - it's alllll good.
My kids like them cooked like this too, way more flavorful than steamed.4 -

There are so so so many awesome veggie recipes. It'd be hard to give you specific though without an idea of WHAT veggies you are looking for. let us know which appeal to you and we can suggest something

Or do the same thing - salt/pepper/spritz of olive oil - then put on the grill! You'd be amazed how something so simple can make veggies taste so yummy. A grill basket or grill wok is great for smaller veg. And kids will eat anything on a skewer. Zucchini and yellow squash are one of my favorites, because I can cut them lengthwise into big "planks" and put straight on the grill.
If you really want to mix it up, try some spices or spice blends. I love Penzy's (They're Bavarian is great on potatoes, and Northwoods is good on anything!) Play around.1 -

Some of my favorites are;
- Baby bok Choy sautéed w oil spray, garlic powder and a bit of light soy sauce
- Sugar snap peas w hummus
- Seedless cucumber w fresh lemon and salt
- fresh Green beans baked at 400degrees w a tad of olive oil, salt, pepper and roasted almonds bake for 15 min on a cookie sheet
- Tomato wedges, and sliced onion w a bit of balsamic vinegar, basil, salt and pepper
- Sprouts added to a sandwhich
- For part of my dinner I baked potato wedges, baby carrots and whole white onions cut in half w olive oil, fresh rosemary, salt and pepper, it was really good1 -
Here are some veggie dishes that we have eaten recently....personally, I'd just pick a cuisine and explore it. Below is some Indian, Sichuan, Mediterranean cuisines....

Make a soup.
Cauliflower
Broccoli
Potatoes
Leek
Carrot
Onion
Corn
Peas
Vegtable Stock
Herbs and spices
Salt and pepper
Preety much anything that you like. Plenty of recipes and ideas online.
Tomato soup is really simple to make (search for a recipe).2 -
I don't use a lot of recipes and tend to cook by the "little of this/little of that" method, but I keep frozen veggies on hand to add to just about anything. I make a lot of stir fry, taco bowls, chili with tons of veg, roasted Brussels sprouts, roasted cauliflower (great with hummus), and I usually make some kind of "what's about to go bad?" veggie soup on Saturdays.1

Thanks for all the suggestions. I bought a pan for my grill, tossed veggies in a bit of EVOO, w/ dash of salt & pepper and OMG, we had no left overs. I'll be trying out others recipes very soon. Thanks again for your help.0

Definitely love veggies on the grill! I have been tossing them in a bit of ranch seasoning and they are delicious! I use all different kinds of veggies for this, so whatever is on sale works for me!1
