Running Out of Ideas....

Hi everyone,
I recently moved in with my boyfriend and we like to do a lot of cooking at home. Unfortunately we have a dramatic difference in taste. He's a fast/junk food, steak and potatoes, and comfort food kind of guy. Before we began dating I was a vegan. I have lightened up on the vegan thing a little, only because I didn't feel well after a while of that sort of diet. I now eat meat if its organic and grassfed, but I really try not to eat it everyday. The issue I have is since we have moved in together, it is difficult to come up with dinner ideas that suit both my taste and his without being overly unhealthy or too elaborate.
So getting to the point.... I really need help with heathy ( and simple) ideas that feature veggies more than animal proteins. Ideas?

I have the same problem. Lol. Here's what I do:
Make a veggie casserole with low fat cheese, etc. This way, he gets the cheesy goodness and you get to eat it without guilt.
Same with pasta, buy whole wheat or spelt pasta. He can eat as much as he wants, you eat about 1 cup of it with a salad on the side.
Chicken breast, bread 1 or 2 pieces for him but don't bread yours, bake them. Make potatoes on the side for him, sweet potatoes on the side for you. Make extra so you have lunch the next day too.

I tend to do pretty quick meals that don't require a whole lot of precision or technique and have pretty much converted a meat/potatoes/vegetables guy into one who's happy with the varieties of glop I put on his plate.

One thing I do to make things "seem meaty" when they are mostly veg is flavor with pork products. I have country ham in the freezer and use a mandoline to shave off a bit into what I'm cooking. Country ham is the poor man's prosciutto. One ounce of it is more than enough to flavor supper for two -- or you could leave it out of yours. It only takes a second to heat the shaved ham through so dish out your serving and then add the ham to the pot and stir it around. Voila, he has the ham version of what you are eating.
I also do this on occasion with a good salami. A salami sandwich is a whole lot of salami. Green beans with a little shredded salami seems like an incredibly decadent meaty thing with hardly any meat. Basically, you are using the salami as you would salt and butter. Maybe a teaspoon or two of shredded salami on green beans for two.
Eventually, he may, like my hubby has, decide that veggie suppers are sufficiently good that he no longer whines about it. I try to do meatless suppers a few days a week but that doesn't mean that I don't make a mean Philly cheesesteak, including homemade sub rolls. Ya gotta throw the boy a bone on occasion -- and I like them, too!0 -
