I don't worry about being exact with logging - you can't be if you are eating out. I look for good choices at restaurants that appeal to me. I drink lots of water during the day and enjoy a cocktail or two at night. I walk a lot (sight seeing) or ride a bike if available.
I don't deny myself treats but I don't go overboard either. I try to make it more about the location and the amenities there (hiking trails, tourist attractions like museums/lighthouses/etc) than about food.
Moderation - in everything.
If I know I want a big ol' lobster dinner with all the fixin's and melted butter, then during the day I am going to eat much fewer calories than normal. 0
