I just use the Kodiak pancake mix and add in my favorite flavor of protein powder because I'm lazy and don't want to make them from scratch. Macros are good on the Kodiak cakes though

I second the Kodiak power cakes (they come in dark chocolate or crunchy peanut butter)! Get them at target for $5 a box otherwise they are pricier on Amazon or elsewhere.
I have a few recipes on my Pinterest board for making my own on protein cake mix. It seems pretty simple!

This is the one I use, I have the book but it's posted here for free: http://www.joe.co.uk/fitness-health/recipe-stay-lean-with-these-easy-to-make-protein-pancakes/5288

Another kodiak cake fan here. Never going back either. You can add protein powder too but I don't think it's necessary.

For what it's worth, the 'frontier' mix (buttermilk/honey) only has 3 less grams of protein for the same amount, and I find it tastier... but I love the power cakes with savory toppings - makes a very tasty sandwich bun!

I use a sour cream pancake recipe but substitute Greek yogurt for the sour cream, almond meal or coconut flour for the all purpose flour, usually a nut milk instead of dairy, and coconut oil for whatever fat is in them. Light, delicious, and filling. I sometimes add a serving of protein powder but only for myself, not when making them for the whole family.

I've never actually TRIED these, but I've had them on my "to make" list for... Years. Supposedly they're good? ;)

Carbalose flour or Carbquik mix make great pancakes, utterly packed with protein and fiber. It's a staple in my kitchen

I feel like I make some simple yet efficient protein pancakes.
I do 2 bags of instant oats (original)
    One egg
    45 mL Whole Milk
30 grams protein powder (mine is cinnamon flavored)
    1 tsp of Macca Powder
    1 tsp Vanilla Extract
    .5 tsp Cinnamon
And lately I've been on the fence regarding whether or not to add the packet of Splenda I normally add
This all makes one large or two medium pancakes with the right carbs and protein for after the gym. It's nice if you gotta drive to the gym and leave your post workout meal in the car cause
    A. During summer that car gets hot and these pancakes taste good no matter what.
    B. It's right there in the car so you get to it right after working out.

I made those a lot. They are tasty, but you got to add fruit or they're too dry. Haven't made them in ages though for some reason.

Have any of you ever used the Kodiak mix in a waffle maker and, if so, did it work okay? I feel like it should but I wanted to check first.

I am a terrible pancake maker for some reason and, as a result, only make waffles.

Mmm, this recipe intrigues me. Do you make a blueberry sauce for the top, or do you throw the blueberries in the blender?

neither, you pour the pancakes in the pan and drop the blueberries in whole (usually 2-3 per pancake). they become juicy and sweet just like if you've ever had a blueberry muffin.

i usually top it with a sugar free raspberry syrup. ;)

Is that added to Kodiak mix or on its own?

it's definitely not added to that premade mix. Kodiak already has it's own levening agents and protein powder.

I mix flour (usually half white, half wholegrain), whey powder, baking powder (spoonful per cup of flour), baking soda (pinch per cup of flour) a little salt, maybe some sugar for the dry mix.

Then at least one egg per cup of flour, buttermilk, maybe some honey, and a little oil for the wet mix.

Combine these, adjusting buttermilk to get the consistency you want and cook.

I don't actually measure, just keep rough proportions, but they come out fine, yummy.

ETA: Crepes are very eggy and pretty good protein, too. They are easy to make.

One scoop pancake mix, one scoop Cinnabun or Pumpkin Pie protein powder, unsweetened vanilla almond milk until it's the right consistency. Add blueberries to the Cinnabun ones, pecans to the Pumpkin Pie one. Both freaking delicious.

I did try Strawberry protein powder with strawberries added in once. That was a total fail. :s

Yes I've done it, but the batter needs to be a bit runnier than when I make pancakes for it to work.
