Dinner ideas

I work evening shifts from 2pm tp 12am and want to start taking dinners and nit sandwiches. I have googled but nothing much pops up. I need ideas that can be cooked in big batches on the weekend then either frozen or in the fridge, but then can be microwaved!
So far I'm planning stews, soups, casserole, meat and veg.
Any ideas?!

I made an awesome pork tenderloin, stuffed with sausage, mushrooms, and spinach this past weekend. It fed the girl and I dinner, and still had enough left over for lunch/dinner for three days.
I also found spinach and pepperoni frittata to be amazing. It's even better after it's been refrigerated overnight. I don't bother reheating it.0 -
Try cooking up a batch of dried beans. Canned beans work too! Very versatile in salads, soups, casserole or blended into hummus then spread on your favorite bread, wrap or lettuce leaf. (I like to use collard greens) Or baked potatoes with salsa and veggies.
Current fav is baked sweet potato topped with applesauce and cinnamon. Great as a snack or dessert!0
