I always seem to have that day where I come up with reasonable plans and goals but by the next day I'm already ready to give up.

Been there...still there sometimes. It's tough and I don't really think there's any great trick. For me, it's trying to understand where it's coming from and what my motivations are for wanting to lose weight; it's making a conscious decision. Sometimes, it's that snack is not worth it, I want to lose this weight; sometimes, it's that I'm starving and really just want some sugar or salt and one day shouldn't derail everything.

Also, for me weekends are hardest, so I try to create some extra deficit during the week when it's usually easier for me to stay away from the snacks so that I have the extra calories when the weekend gets away from me. Pick small goals and/or focus on one thing at a time (i.e., no snacking after 8/9/10pm, or stay under calories 5 days this week) rather than try to change lots at once (i.e., no chocolate AND be under calories every day AND exercise for an hour 5 days a week). If you have a day you want to give up, maybe take a break and/or look here for some motivation; if you have a bad day, make the next one good and just try not to have two give up days in a row. Take it one day at a time and maybe try different plans to find what works for you so that hopefully it doesn't seem so hard. Good luck!
