Does anyone cook with coconut oil? What do you normally use it with?

EVERYTHING.
Mostly poultry and eggs.
It is a great oil. EXTREMELY healthy.2 -
You can get coconut oil that has been refined so you won't get the coconut flavor. It works great with anything. The unrefined oil that still has the coconut flavor is delicious with chicken, fish and veggies.1

I use it when I scramble or fry my eggs...I also like it to saute certain veggies for certain dishes for which I want a little of that coconut flavor.2

seriously delicious with fish and a bit of lemon, you can get it much cheaper at trader joe's too, some places will try to charge you an arm and a leg.

I use it in all my frying needs. Just make sure it's not the virgin one, that one can give things a coconut flavor and doesn't tolerate higher heats well...I just use it because it helps with candida issues.1

Coconut oil is actually not the best for cooking. It has a very low smoke point. It's better to cook with oils that has a high smoke point.. also coconut oil is very high in saturated fats3

My stb SIL loves to cook with it. But if you or someone you cook for has high cholesterol then DO NOT use it.0

You are fine as long as you don't intend to use it for deep frying. It works best with your everyday cooking needs. Yes, it has 90% of saturated fatty acid, but it is actually the Good Fats. Rich in Lauric acid (saturated fatty acid) it helps in killing bacteria, boosting metabolism and improve cholesterol.

I was using coconut oil for a while but my partner doesn't like the taste, plus it's a little expensive. I've switched to rapeseed oil which I've heard is just as healthy with less saturated fat.0

My nutritionist friend swears by it, gives her husband it in his coffee. She explained all the health benefits, but I couldn't take it all in - I just got the information that it was good. I use it for cooking chicken and when sauteing greens.0

I mostly use it as a lotion. Ive wanted to try using it in recipes but dont want to use the same bottle i use all over myself. Everytime i pick up an extra bottle, i end up running out of my moisturizer bottle and use the cooking bottle.
Ive mostly been cooking with peanut oil, butter, and bacon grease.0 -
I've used it in some desserts, curries, and Indian and Asian recipes. Although, I don't really like the taste of coconut so I don't cook with it much. I also occasionally add it to smoothies (you can't taste it). A friend of mine just made some vegan truffles made with coconut oil, which were absolutely delicious. Coconut oil also works well as a light skin moisturizer. It soaks in quickly and doesn't leave you feeling oily.

I rarely use coconut oil anymore, since my nutritionist told me all its hype is based on bad science. According to him, if I remember right, they tested only one group, and they have a very structured society with limited food preferences. They cut the study short in order to get the oil to the public, rather than carrying it out fully, so it is very unscientific.
This was very disappointing -- I thought I'd found a panacea. However, I still use it a little, and it's great for coating the insides of glue lids, so that they don't stick to the bottle/tube.1 -
