anyone knows a recipe to a nourishing salad that fills you up?but in the same time with reachable and not expensive ingredients?

    My hubs made one last night that was to die for. (Prices for Cincinnati OH) Green leaf lettuce($1 per lb), pan grilled chicken thighs ($3-5 per lb), rotel tomato/green chilis($2), sour cream($3), and leftover mexican rice($2 viggo). He added a lot of spice to it as well. I'm going to do something similar tonight without the rice. We get 3 meals(1 for hubs, 2 for me) out of the chicken and 6 out of the lettuce. Boneless skinless chicken thighs are pretty cheap, especially if you can catch a sale. We eat them twice a week. We also chop it up and add it with sauteed shallots, mushrooms, garlic and a green veg (broccoli or asparagus). I find that the thighs taste better than the breast which is soo crazy overlarge these days. In a iron skillet the outside gets yummy and crisp even without skin. Add a little cajun blackened seasoning and you are in for a treat.

    My family loves this California Salad

    2 cucumbers, thinly sliced
    3 Roma tomatoes, chopped
    1/2 red onion, thinly sliced
    2 avocados, diced
    2 Tbsp olive oil
    Juice of 1 lemon
    Cilantro, to taste
    Sea salt and pepper to taste

    Toss everything together
