SUMMER SPINACH SALAD

Just stumbled across this simple recipe from last summer --- it was delicious and even better, easy to make! What's your favorite summer salad?

Summer Spinach Salad
fresh raw spinach
carrots, cut into matchsticks
pickled beets, cut into matchsticks
fresh tomatoes, cut into chunks
avocados, cut into chunks
olive oil
red wine vinegar (or balsamic vinegar)
salt & pepper

Briefly parboil carrot matchsticks. Toss everything together and enjoy.

    spinach, matchstick radishes, cilantro, tomatoes, mini sweet red and yellow peppers with salsa instead of dressing

    Options
    Whatever is ripe in the garden today with a homemade vinaigrette. If it's a meal, I'll add canned beans, eggs and/or leftover/canned meat.
