Does anyone have any yummy but healthy ideas for dinner tonight? Thanks!

    I am having fajita chicken (homeade).. I am dropping the tortillas and having it on lettuce. I have a friday ritual to eat this every friday if not homemade it will be in a mexican restaurant... LOL

    I made SZECHUAN HOT AND SOUR SOUP
    - this was dinner tonight and will also provide lunch tomorrow. I'll try to jot down what I used/did:

    Heat 1 tablespoon neutral oil in a saucepan, add
    200 grams chicken breast, cut into pieces, stir until no longer pink, add
    1 carrot and/or a few fresh mushrooms - cut in half and then into thin slices
    tin of bamboo shoots - cut into thin slices
    jar of lotus rootlets - cut in half
    1 red shallot - cut in half and then into thin slices
    1 teaspoon paprika
    1 tablespoon soy sauce
    1 tablespoon apple cider vinegar
    enough boiling water to make it soupy
    Add 1 tablespoon of corn starch to the jar still containing the liquid from the lotus stems, shake well, add to soup, add
    50 grams rice noodles.

    Let simmer until vegetables are tender but still crisp and noodles are soft but not mushy.
