Every Day Sausage Rolls (a bit lighter than the usual version)

I love sausage rolls, but we can't always be downing mouthfuls of lard on a daily basis. Here's my solution:

8oz sausage meat (bulk sausage) (any kind)
2 sweet dessert apples*
6oz SR flour + extra for dusting
3-3.5oz water
Pinch of salt
Egg or milk for glazing

Grate the apples and squeeze out the juice (drink this, it's amazing). Mix grated apple with the sausagemeat**.

Mix the flour, salt and enough water to make a soft dough. Knead until smooth. Roll out as thin as you can into a rectangle. Cut lengthwise into two strips.

Divide sausage mixture into two and roll into long sausages the same length as the dough strips. Lay on the strips and roll up.

Cut each roll into 4 for picnic size or 12 for party size sausage rolls. Brush with egg or milk and bake 180C (350F) for 20-25min until golden and cooked.

Enjoy!

*Don't use cooking apples or sour apples like Granny Smith for this, it'll taste too sharp. Any sweet apple will do - something tasty like Cox or Braeburn is ideal.

**Most sausagemeat is so well seasoned it needs no extra salt. If in doubt, fry a small piece of the filling and taste it - add salt if needed.

    And this picture illustrates why there's no fat in the dough. It doesn't need it! I'm all about excess fat for special occasions, but this is an ample sufficiency for an everyday meal. Do try not to overbake these or they can go hard, but otherwise the fat from the filing gives them a nice texture.
