Headed into a busy week, what's your fav slow cooker meal that is good to eat all week. High veggie and protein, low cal

    Chicken cacciatore. Chicken, italian seasoning, a jar of italian pasta sauce (if you're lazy like me), and whatever veggies you'd like. Served over rice or pasta. Very hearty, but low cal, higher protein and low fat.

    I'm a huge soup fan. My fave is a sausage and bean soup. I actually made a whole bunch and froze it. Some is thawing in my fridge right now for lunch this week.

    I use whatever dried beans I have on hand and use can diced tomatoes instead of sun-dried tomatoes (helps make it more of a soup than a stew). Also, I use whatever ground meat I have on hand, instead of sausage, you just might need to add more seasoning if you're not using sausages.

    I do this all the time, but I don't make just one thing because I get bored.

    Just yesterday I made this:
    1 or 2 chickens cut up, bone in but no skin (breasts, thighs, legs)
    1/4 cup apple cider vinegar
    1 Tbsp Worcestershire sauce
    One large onion cut up
    6 garlic cloves sliced
    Penzey's Northwoods seasoning (or your fav)
    Enough water to cover
    Cook on low for 5.5 hours or until done.

    I pull all the meat off the bone and refrigerate.
    I take the stock and make a noodle soup with mixed vegetables and refrigerate that.
    Filter and freeze any additional stock leftover to cook with rice or make a different kind of soup.

    Then, my family has lots to choose from for our meals. Like today, I had soup and added just a little chicken in to meet my calorie goal. My daughter added lots of chicken to hers. My other daughter used the chicken for quesadillas. Last night I had a green salad with chicken. Tonight we are having chicken with a load of Brussels sprouts and baked potatoes. Cut up the chicken for a chicken salad or chicken BBQ. My husband will stir fry onions and green beans with Hoison sauce and add the chicken to that. So many choices with meat that was on sale and nobody can say they are tired of "leftovers".

    Dry navy beans, baby carrots cut in coins, tomato, onion, frozen sweet corn, salt, pepper, garlic powder, smoked paprika and a dash of cumin... So good.
    Eat plain like a stew/soup or served over rice or potatoes

    No just cook the dry beans w no water...
    Yes of course water fill it half way
