    Hello and welcome!
Since you have some medical issues going on , maybe talk to your doctor at your next visit and ask him what type of exercise would be best for you.
Walking is great and a fit bit can be a great motivational tool!
Weight loss comes from a calorie deficit. If you eat less then you burn, you will lose weight. Calories in calories out.
Get yourself a food scale and learn how to weigh your portions. A food scale will help you understand how many calories your actually consuming and teaches us what real portion sizes look like.

you lose it by eating at a calorie defecit

you exercise within your physical limits to get fit - if you're in flare and can't do something, there is no need to. I assume you have an auto-immune arthritis as you talk of some days being worse than others

you may find something like cycling or swimming easier on your joints, but walking is good too.

you can't target a body area with specific exercises (other than underlying musculature) it really is down to your diet
