Sticking to the plan, weight not moving

So I hit 15 days in a row logging today. I have lost one pound. I can't figure it out.
44yo male, 6'2", 100+ lbs to lose. I set a daily goal of 1800 calories. A few weeks ago I started and stalled, but I initially lost 10 pounds in about a week and a half which I chalk up to the usual first week drop during a diet or water weight or something, I don't know. Then I was away for a week and didn't track. I returned and decided I was logging every morsel from that point forward. That was 15 days ago.

I was under 13 of those days. 1 Day I went over 200 and another day 300. However, every other day I'm under and some days by a few hundred. If I look at the net above or below goal for those 15 days I'm 850 calories UNDER my 1800/day goal for the last two weeks.

I'm tracking everything. Dressing, mayo, a couple chips. Everything I put in my mouth I put into my fitness pal.

Even if I was doing something wrong or measuring something wrong just common sense observation shows I'm eating WAY less than I normally do. No snack cakes daily, much smaller portions, 1 sandwich for lunch instead of two, a banana or apple for breakfast instead of a bowl of sugar cereal or a few eggs and toast slathered with butter, half a small popcorn at a movie instead of a large. Everything I eat is scrutinized and tracked, even eating out I'm eating the grilled chicken or steamed veggies instead of the giant onion ring cheeseburger or alfredo pasta.

I'm not cheating beyond the calories I mentioned above. Is 1800 to high? I'm 300+ pounds, most calculators tell me about 2000 to lose weight, 2500 to maintain. Very frustrated.

    Try not to rely on the scale as much as other indicators. Do you have a positive change in energy? Can you walk faster\further \or for a longer amount of time before getting tired? Are your clothes fitting the same? Sometimes the scale stalls even when you are moving in the right direction. Keep tracking and things will fall into place. Keep up the great work!

    It sounds like you lost 10 pounds in a little over a month, and that is great! It seems like some people lose a lot at first and then don't see any loss for a bit. Considering that you took a week off in between that you are doing really well. Don't give up and you will likely see a nice drop.

    I suspect it's water weight from New exercise...give it time.

    10lbs in a month OH MOST DEFENITLY GREAT... Stick to what your doing you may played but change your activity lifestyle up a bit so u don't get bored.. It's a lifestyle not a diet.. I was 230 I'm 36 female and now 215 in 5years I been trying my lowest was 205 I'm not giving up so You don't either YOU GOT THIS BRO 80/20 rule 80% food intake
    20% excercise... Your really are what ya eat... Keep up the great new you and keep us updated....
