Spaghetti Squash Fritters w/ PHOTO – 1 WW Point for 2!

Many of you have made spaghetti squash before due to its high nutritional content, virtually zero calories and low carbs but if you’ve ever made this you’ve noticed one squash makes A LOT!!! So what do you do with some of the leftovers? Try these...

1 cup cooked spaghetti squash
¼ tsp dried parsley
¼ tsp dried thyme
1 garlic clove
2 tbsp egg beaters
6 tbsp whole-wheat flour
Black pepper to taste

Directions: combine ingredients and drop onto skillet covered in cooking spray, cook until golden brown. Makes 4 fritters.

Points: Only 1 point for 2 fritters! (117 calories, 1.1 g fat, 0.7 fiber for 2)

    Anytime hun ;) I plan on posting my recipies daily until I run out. Then I'll have to cook something new I suppose, lol!

    I'm sure egg whites would be fine. I used an egg when I made these which makes them 1 WW point each. I bought egg whites forever, even made a frittata with it then realized the more normal-looking yellow egg substitutes were so much better to work with and would have made the frittata look more normal, lol! Same calories and 0 cholesterol as well so I saw no reason not to switch.

    wow! looks pretty delish! Anybody care to post a recipe for "spaghetti squash"??? I see different comments on it all the time, but I'm not quite sure how it all works. lol I'd love to try it! Thanks!! :drinker:

  • I know that it would be more points and cals but do you think that by using eggs it that much worse for you?? I ask only because I buy fresh farm eggs and find that the taste is unbeatable!

    It’s not bad on cals (the first time I made these was with an egg, same WW points) it would just be high in cholesterol as eggs are. As long as you don't eat too many eggs weekly you'll be fine.

    Nutrition with an egg instead: 135 cals, 27.g fat, 0.7 fiber, 93mg cholesterol.

    Finally got a chance to make these this morning. Two thumbs up.

    so many variations you can do with spices. I think i might do a batch with a little bit of rf feta cheese, basil and black pepper.
