Need Exercise Advice, for an exercise-virgin!

History:
I am trying to lose about 150 lbs total, to get down to about 130ish. I am 5'4 and currently at 248 (oh yeah, and female). About nine mos ago I cut out all dairy and meat, which helped me lose a good 30 lbs. I am 39 years old, and do not think I have ever exercised in my life, except for gym class in grade school. I did sign up here on my fitness pal a year ago, but really did not explore it, until a month ago. So here, I am diving in.

Currently, I am eating about 1200 calories per day, but it seems when I exercise, the fitness pal allows me more calories. I do not have a gym pass, so all is done at home or around the neighborhood.

This past week I have started to exercise, and want to make sure I do it right since I am a bonafide exercise-virgin, per se, hah.. I have been power-walking 30 mins every evening (4th day now), which is about for me at my pace almost a mile. Today I did day 1 of the 30-day shred with 5 lb weights (wow and ouch, hah) But I made it through. I also did a pilates video (one for beginners) a couple days ago which I really enjoyed.

I want to know the best and efficient way to lose fat, gain a little muscle (I do not want to bulk up however).

I read that it is good to incorporate eating after a workout. Since I have cut out animal products, would a huge spinach salad be good? I am thinking things high in protein are best, so maybe I should have a meal of beans or quinoa ready for me post-workout?

I want to have a long, lean body. I currently carry much of my weight in the legs and thighs.

I would love any suggestions to help me tailor an exercise program for my goals and my current weight and eating habits. I am on a mission! I am sure since this is all new for me, the first month or two I am going to get the biggest bang for the buck out of exercise, and like looking for a sale, I want to nail the best exercise/eating deal I can!

So far, I have been dabbling (walking, pilates, 30 day shred) and I am just loss as the most efficient way to execute my quest to be come a goddess, inside and out! Can I do them all everyday? Should I rotate? Also, I work through the home, so exercise times have no restrictions. What else can I add in? I can't believe how much I am loving exercise!
