Fighting with odd work schedules.

I work 3-12hour night shifts as a nurse, so it rough to follow a real diet. I try to follow the dash diet and do well on my days off. I'm really struggling while I'm at work.
Typically, I work Saturday, Sunday and Monday night's. I eat a light meal in saturday, like fish and a baked potato, then I don't eat most of the night. When I get off, I get a Greek yogurt then sleep for 8ish hours. Before Sundays shift I eat something light again. Then off Monday morning, I drink a protien shake, gym then bed for 8ish hours. Tuesday is when I finally eat normal again.
I do keep fiber bars and protien bars in my pockets at work, but I don't always get the chance to eat them. The only thing I can accomplish is my water intake.
Any tips please?

    I also work nights, 3-13HR shifts in the lab department. The best thing that has worked for me is meal planning. This comes to a total of 9 meals per work week. You can buy meal prep containers, the ones with compartments to help portion out your foods. The last thing I want to do is slave away in the kitchen or eat a lot of fast food. Prep your meals ahead of time.

    I'm also a night nurse. I track my food for the 24 hour period. I eat breakfast (9am), take a nap, dinner at 5pm and again at around 11. Then when I'm not working I eat regular timed meals with my family
