Jerk Chicken Salad

12oz leftover roast chicken(or just go buy a roast chicken at the deli)
7oz 2% plain Greek yogurt
small onion chopped
garlic(to your liking)
2.5 cups Trader Joe's "Healthy 8" vegetable mix
juice of 1 lime
Seasoning. I used Jerk seasoning because well you are what you eat. But you could use BBQ rub or Mrs dash. Whatever you like.
Separate the meat from skin/bone(discard) and chop. Combine everything let sit overnight for the flavors to bloom.

Makes 6 good size servings of about 180 calories per serving.
