Lunch ideas?

I am the type of person who eats mostly the same things daily. My usual go to lunch was a fruit of some kind and a package of Lipton Tomato Garden Vegetable soup, but the sodium is insane. So I'm looking for some healthy, low carb, vegetarian friendly options for lunches. Something besides just salad, and preferably no eggs. I figured where better to come for ideas! Thanks in advance

Take a look at Indian recipies, there are many fantastic vegetarian ones. It depends if you have time to cook or if you need to buy. I usually knock up some pasta these days and add what I feel like at the time, either as a batch or mix it each day depending on the time that I have. You could use some of the pots of pasta sauce to add a base and add other stuff in.0

Curried lentils and millet is my go to recipe. I make a big batch for dinner and portion out a few lunches. You can also make your own homemade vegetable soup. Also remember salads do not have to be leafy greens based. You can chop up tomatoes, peppers, onion and celery and dress with a little oil and vinegar. For protein, you can throw some beans, chickpeas or quinoa in it.0

An amazing high protein/high carb lunch/dinner, lemon zest and tomato prawn spaghetti.....its incredible....
Add Garlic, onion and chili powder and cook off, add cherry tomatoes and prawns....add a cup of water from spaghetti water.....simmer for 20 minutes, add some rocket.....add the lemon zest......drain off the spaghetti, mix it in with sauce.....add a bit more lemon zest.

You can offset a high sodium day by drinking a lot of water and eating potassium rich foods.
Tomatoes are very high in potassium.
Don't throw away that tomato soup can just yet.
They also contain a lot of magnesium which many people are deficient in.
I always try to reach a 1:1 ration pottassium/sodium.
Ex: If I eat 3,000 sodium for a day, I try to get at least 3,000 of potassium in foods.
Note: If you are under doctors care for sodium intake disregard this.
I often throw in a can of diced tomatoes (drained) into a tomato soup to cut down saltiness.0
