So if I have a late night snacker after midnight before bed do I count it as the previous day or next?

If I had the calories left, I'd count it as the previous day. If not, the next.

In the long run it doesn't really matter.

It doesn't really matter, but I've always logged before bed as previous day.

For me, my daily calories are for when I wake until I go to bed at night. If I eat something before I go to sleep for the night, I count it on that day. The time doesn't matter.

I look at my calories on more of a weekly basis than daily. I will do things like save 50 calories per day to use on Friday night. As long as you're averaging the correct calories day by day when you log them makes little difference.
