But I can't until tomorrow night... So, what can I do with a can of mackerel? Does it have to be boned like canned salmon? And why do I even have it? I sure don't remember buying it!

What does the can say? It could have bones in it.
You could fix it like you would tuna. Or any variation of this:

I just eat mackerel straight from the can (well, I dump it in a bowl and heat it a bit first). Much like canned salmon, you can just eat the whole thing, bones and all, without worry.1

Mix with eggs or egg whites, some seasonings you prefer, optional breadcrumbs or cheese to bind and sauté or bake! Easy and can be eaten plain or in a sandwhich. Mix some sriracha and low fat cream cheese together and you got a bomb dipping sauce0
