I've never counted calories before but my dad swears it will work so here I go!

Welcome.
It helps to pre-plan meals and snacks, build in a little slack or be flexible for unplanned meals or snacks. Make you weigh or measure your foods, eyeballing usually leads to underestimating amount of food, therefore under counting of calories.
