Help with P90x3 diet

Hey, I started P90x3 last week and I'm enjoying it a lot! According to the nutrition guide I should be eating 2,100 calories a day but I'm struggling to get my intake up to that amount and still stay on track with my Protein, Carbs and Fat percentages! Can anyone recommend a daily meal plan or snacks that cover all three equally? Or can anyone recommend a good recipe book that has good, filling meals in that I can use? Thanks!
I should probably add that I think myself as 'Skinny Fat', I need to gain muscle and lose some fat

You can eat anything you want - set and hit the right amount of calories, log correctly (it's very easy to underestimate intake if you are or have been overweight), get enough protein, and let the rest fall into place.1
