Question about food dehydrators

I bought a food dehydrator yesterday because I realized how much money I was spending on dried fruit. Before I was just counting/measuring based on the packaging but now that I'm making it fresh I'm not sure. Does the dehydrating process change the calorie, sugar, etc. counts? I know that the fruit shrinks without moisture but is "one apple" still "one apple" when I log it?
