Legend of the Zucchini Fairy
All of you gardeners will know this one! The Zucchini Fairy comes around at midnight, and looks for any zucchini that were not quite large enough to pick the previous day. She sprinkles them with her magic dust and ZAP!! they grow to the size of baseball bats.
This time of year, the zucchini are coming in faster than we can eat them. Neighbors won't accept any more. The food banks still do (but I'm not 100% sure what they do with all of them).
In honor of zucchini season, please share your favorite zucchini recipe!

Zucchini Tomato Salad
(all measures are approximate - suit yourself!)
1 small-medium zucchini
1 cup grape or cherry tomatoes
1/4 cup feta cheese
2-3 Tbsp balsamic vinegar
Slice zucchini thin using a mandolin or grater. Combine ingredients in bowl & toss. Chill if desired. Serve as a salad or cold side dish.0 -

I usually just grill or roast it, or include it in a stir-fry. Grilling it with coconut oil and salt/pepper is actually pretty incredible! Occasionally I'll make baked zucchini fries but I'm having trouble finding that recipe (sorry!)
When I have a ton of excess, I bake zucchini breads! Maybe not the healthiest things in the world though, so I'll make them in muffin tins or those mini-loaf pans, and bring most of it to work or to family/friends.
I made this one last weekend (soooo good, and I added maybe a teaspoon of mini chocolate chips on top of each mini loaf):

Spiralize them and bake w marinara sauce and mozerella cheese,
(If u don't have a spiralizer, slice thinly and put on foil covered baking sheet)
Add Mozzerella when they are almost done1 -
Baked shortly at super high heat with just some salt and pepper. Maybe a little garlic or paprika lime seasoning if I want0

I use the grater (cheese shred size) and grate it into everything. Seems I can make more disappear faster that way and even hubby doesn't realize it's zucchini, lol. I use it raw grated as 'low carb rice' under my stirfry or for my lazy cabbage rolls.
You can also slice it thinly and layer it in a baking pan with cinnamon, nutmeg, and a bit of sweetener for fake apple pie slices.1 -
