Nom nom but low cal puddings and traybakes?

Hi I'm looking for some healthy ideas as I use to bake quite a bit but. Haven't for ages as i trying to keep to my daily cal consumption. Finding that 7pm craving has not gone away having my two pieces of dark choc which is great but would like some go to recipes to change it up a bit??? Cheers

    not a bake but it is a sweet- have you tried making protein fluff? It's similar to ice cream but lighter and fluffier.

    I found a single serving recipe for banana bread online. They do single serving cookie recipes, carrot cake, etc.

    I doubled the banana bread recipe, added some PB2 and divided it between 6 small silicone liners. 91 cal a piece.

    60g ripe banana, mashed
    30g coconut oil, melted
    60g plain flour (I used spelt)
    10g PB2
    3 tbsp water
    2 tbsp Truvia (or whatever sweetener you like - or leave it out if your bananas are really ripe)
    About 1/4 tsp baking powder
    Small pinch of salt
    Splash of vanilla extract

    I mixed the mashed banana, coconut oil, Truvia and water together, added the flour and PB2 and baked them for about 12 mins.

    I think the total was 550-ish calories for the lot, so you can divide that between however many liners you want.

    (I haven't actually eaten one yet... so maybe I have just shared something disgusting lol. The batter tasted nice though.)

    The recipe I used was this one, with my own modifications. I would've used applesauce if I had some, instead of the coconut oil.

    You could lower the calories by reducing the maple syrup.
