Low Sugar Recipes

About two weeks ago I felt like I was gaining back some pounds. I've been maintaining for well over a year and threw out all my "fat" clothes and have nice things now that show off my new waist, etc. So I wasn't happy about this little round belly that seemed to pop out overnight.

I was unhappy about it but having trouble just cutting back on my normal eating. Then I read online about sugar, how when you eat sugar your body puts out insulin that gathers up the excess and stores it as fat-- on your belly! Belly fat! It finally clicked.

I've always been a big sugar eater/lover. But now I've gotten rid of what I call obvious sugar-- my candy and cookie stashes. (My ice cream stash is waiting for a visit from my son.) And it's working. Today my belly is pretty flat again, after a really short time, and I'm not depriving myself of anything except obvious sugar.

So I've been looking for low sugar recipes for things like muffins, cookies, treats. Mostly what I see are recipes with substitutions that I think are ridiculous, like 2 cups of pureed dates as the sweetener. So many calories!!! My own fix is to use LESS SUGAR.

I made some muffins over the weekend. Commercially-made muffins have become cupcakes practically. I found one recipe where the sweetener was bananas and I added just 2 T. of maple syrup, and I made it with my home-ground wheat and added fresh blueberries. Healthy and yum.

I also made a roll of cookie dough that features bananas, quick oats, whole wheat flour and I substituted a small amount of chopped raisins for my usual mini chocolate chips. I live alone so I like having this roll on hand to slice and bake just 3 or 4 crispy cookies at a time.

Anyway, that's my story. It's getting easier to live without my Smarties and Keeblers. This one change got me back on track and now I'm on a roll and might get to my actual goal weight this time. Yay!

I like liquid stevia as a sweetener. One to two drops is about the same as a teaspoon of sugar, and one dropperfull is similar to a 1/4 cup of sugar.

I tend to use coconut flour and flax meal for baking since it is much lower GI than other flours. Flour is basically sugar to the body so I tend to limit that too... Well I limit it for my family and skip it myself. I find the less sugar or carbs I have, the less I want it.
