How much water can you retain when you have sore muscles ?
I'm a woman, weight 193, high 5'6"
39 years old, hypothyroid but taking pills.
From 2 months I'm eating 1000 calories a day, sometimes I go over 200 calories. I walk every day. The other day I ate under calories and I did walking/jogging. Yesterday also, I ate 1300-1400 calories. Muscle are lightly sore. This morning I weight 3 more pounds.
Are 2 weeks the weight is stalling.

First of all, you're eating too little for your size. Restricting your calories so much isn't doing your body any good because you'll be losing more muscle than you should be.
All of us retain and lose water constantly. Things like hormones, sodium intake and muscle repair can influence how much water you're retaining. It can take a few days to drop that water again, too.
I once gained 18 pounds of water while in the hospital for 3 days after surgery. That was while eating a soft food diet and not very much of that. It took over a week to lose it all again.1
