What to pair with gazpacho...??

I made gazpacho tonight and it's chilling in my fridge for dinners/lunches for the next couple days. That in mind, what should I serve alongside the soup?! It's SO light, I don't think I could just eat a bowl and feel satisfied. :) Likely a protein on the side...but how could/should I prepare it? (Chicken is my best option...I also have salmon and tilapia in the fridge).

    YUM! We are making gazpacho tomorrow night for dinner, I can't wait!

    When I serve it, we put toppings on to fill out the meal a bit, usually croutons, cheese, and sliced avocado. YUM!

    Or you could make little finger sandwiches or quesadillas on the side.
