Carbs= frenemy

When trying to shed fat (I have over 100lbs to lose) how many grams of carbs should one eat per day? I try to stick to whole grain carbs but any little bit gets me bloated and I easily retain water weight.

Water weight is just water weight, not something you should worry about. It shouldn't affect the way you eat unless certain foods also make you uncomfortable. How many grams of carbs you eat depends on your preferences and how it affects your hunger. Personally, I have lost 90 lbs so far eating 200-250 grams of carbs a day both whole and processed.
As a start it's best to just focus on the calories and try to experiment and figure out what foods make it easier for you to stay within calories. As you lose weight you gradually learn how carbs and other macros affect your appetite, but that comes later naturally without having to force it.2 -
I ate around 200-250g daily during my 55lb weight loss
In maintenance I eat around 200-300g daily
Carbs are not detrimental to weight loss ...excess calories are3
