Favorite peach recipes?

I might have bought too many peaches.

Any tasty recipes to use them up? Healthy-ish or not, although this is probably not the best time for me to make pies or crisps...

    Sliced in half, pits removed and grilled face down. With a bourbon glaze drizzle!

    Slice and freeze them. You'll be glad you did later.
    Use them in smoothie with ice, yogurt and protein powder. Fresh or frozen that's a fast, healthy breakfast.

    1 cup biscuick, 1 cup sugar, 1 cup milk, 1 cup peach slices... season to spec (I like cinnamon and nutmeg in mine). Cook on 400 for 40 minutes (or until done). Peach cobbler. Yum!

    3C Milk – I use FF or 1%
    2-1/2C Unsweetened Apple Sauce
    1/2C Brown Sugar
    6C Uncooked Old Fashioned Oats
    2C Frozen Cherries
    1.5tsp Baking Powder
    1tsp Salt
    1tsp Vanilla Extract

    Freezing might be a last resort, but I don't do smoothies anymore.

    That cobbler looks good, but 1 cup sugar... ouch, lol.

    Might try the oatmeal, but nobody else would eat it and I already had peach oatmeal this morning.

    My mother-in-law was a lazy cook. Can o' peaches, or 2 lb of peaches cut up and Karo light syrup. 1 box of yellow cake mix. 1 stick of butter. Pour peaches in 9x13 pan. Pour cake mix in same. Cut up butter and distribute it above all that. Bake according to the cake recipe. Alas, it's one of the pleasures of life I have not indulged since January.

    I'm in maintenance, and I run alot... Totally forgot I was on MFP for a second when I posted that. LOL! Um... you could probably take down the amount of sugar a bit, or substitute something else. Like @JeromeBarry1 's mom, I'm a lazy cook... BUT I love to cook, so I have a lot of 'lazy' recipes. I've also made peach preserves with them... but again, a LOT of sugar. You could can them (you don't need a pressure cooker for peaches) - just:
    - blanch them,
    - peel the skin off
    - cut into halves or slices,
    - put into a jar (I save pasta sauce jars for this... told you I"m lazy)
    - fill jar with water (or you can make syrup... I just use water as it's fewer calories) to cover peaches
    - put lid on jar,
    - place jar into a giant stock pot and fill with water... should cover the peach jars
    - boil for about 30 minutes
    - turn off the pot, take jars out and let them sit out to cool down. The jars should seal themselves after they've cooled. If they don't seal, put them in the fridge. Sealed jars should be placed into a dark pantry until use.

    I like slicing them up and mixing them with plain greek yogurt and honey. Even better if you roast them first..

    If you like a bit more savory application, they're also also good tossed in salads with grilled chicken. I've seen some peach salsa recipes floating around that look pretty dynamite, too.
    Or peach pancakes, perhaps?
