Fresh Ginger and Canned Beets...

I recently got some fresh ginger root from Meijer because it was on sale and I read an article saying it can help lower blood pressure and blood sugar and my boyfriend has high blood pressure (avg 190/170) and both of us are high risk for diabetes (I'm one of 5 on my moms side of the family that does NOT have diabetes) The only problem is I have no idea what to do with Ginger. I put it on some steamed green beans tonight and in a cake with some lemon zest a few nights ago but I currently have a half pound root chillin in my freezer waiting for some more awesome recipes to come along.
I also have a can of beets in my pantry. I meant to grab green beans and didn't realize I grabbed the wrong can until I was already home and it has been sitting in my pantry looking very sad for 4 months. I have never had a beet so I don't know if I like them, but I don't know how to cook them.
Does anyone have a good recipe involving either canned beets or fresh ginger? If you do can you share them with me please?

Drizzle sliced beets with balsamic vinegar (or any sweet, red vinegar) and crumble some goat cheese on top.0

I love canned beetroot. We in Australia use them a lot. Just put some on your next salad like you would tomato! Or slice and put on a burger roll with any meat and salad as in a hamburger, so good! Dice it up with potato, cabbage, stewing beef if you feel like it too and beef stock.. little sour cream or greek yogurt and you have as Russian soup called Borscht. So good!0

Beets eat them out of the can. Ginger - grate over rice, season fish, steep in water for tea, chop it up into a vinaigrette.0

Oooooh I've had Borscht before. I had no idea it had beets in it. Definitely going to put cabbage and beef stock on my grocery list next week.0 -

I used to hate beets AND goat cheese, until the Costco sample lady was handing out this combination. Now I'm addicted. Dang Costco sample ladies get me with something almost every week.0 -
ginger yum .. zest some in oatmeal ,peaches, seltzer water great in addition with garlic in homemade stir fry...
it has helped in lowering BP...0
